Texas Caviar

We love this recipe. It’s very healthy and delicious, and those two things don’t often go together. It’s packed full of veggies and topped off with some avocados. And who doesn’t love avocados?

Here’s what you need:

  • 2 (14oz) cans Black eyed peas, drained
  • 1 can White Hominy, drained
  • 1 medium Onion, chopped
  • 4 green Onions, chopped
  • 2 fresh Tomatos, diced
  • 2 cloves Garlic, minced
  • 1 Poblano pepper, chopped
  • 1 Jalepeno pepper, chopped
  • 1/2 cup Cilantro, chopped
  • 2 Avocados, chopped
  • 1 (8oz) bottle Italian salad dressing

Mince the Garlic.

Minced Garlic

Chop and combine all ingredients, except for avocados and the dressing.


Pour dressing over the vegetable mixture, cover and marinate at least 2 hours in the refridgerator. Add chopped avocado and serve with tortilla chips.
