Peach Strawberry Crumble

Phillip and I ended up at the Dallas Farmers Market this weekend. We got so many delicious fruits and veggies, but I was most excited about the peaches. Peaches are one of the many things I look forward to in the Spring. I had been craving a fruit-filled dessert, so I decided to put the peaches together with the strawberries and add a crumble topping. I made this desert last night and I am eating it as I write. It’s even better today than it was yesterday. The flavors  melded together last night for a delicious taste today. This is a very quick and easy dessert. Here’s how it goes.

What you need:

  • 1 cup Flour ( I used a white whole wheat. It’s the health of wheat with the taste of white. Great combo!)
  • 1/2 cup Sugar
  • 1/2 cup packed light brown sugar
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 3/4 stick Butter
  • 8 fresh peaches
  • 1 1/2 pint strawberries (Feel free to add more or less strawberries or peaches depending on which fruit you like most.)
  • 1/2 cup Orange Juice

Combine together Flour, Sugar, Light Brown Sugar, Cinnamon, and Salt in a medium sized bowl. Whisk together with a fork.

Cut cold butter into small pieces and add to mixture. Mix with a fork to combine. This may take a while. Be patient. It will come together.

Peel and cut Peaches into slices. Cut the top off of the Strawberries and cut in half. Place in a baking dish and pour the Orange juice over the fruit.

Sprinkle the crumble mixture on top of the fruit evenly.

Cover with foil and place in the oven at 350 for 15 minutes. Then remove foil and bake for another 20-30 minutes.  Let cool for about 5 minutes.  Then dig in!
